This is a recipe I happened across while online one day and I love it. I was really craving garlic noodles and this hit the spot!
Begin by prepping your veggies. Slice up your green onion, lengthwise (1/4 cup), mince up 4 cloves garlic, slice 1/2 cup mushrooms, and chop 1 cup Gai Choy (chinese mustard greens).
In a bowl, mix together:
1 Tbsp fish sauce
2 Tbsp soy sauce
2 tsp sweet soy sauce (ABC BRAND)
white pepper
This recipe you're supposed to use thick yellow egg noodles (fresh). However, I can't find them here so I use spaghetti noodles. If you can find fresh chinese egg noodles, use those!
Cook the spaghetti until they're nice and soft. Pour into a colander and rinse with cold water. Drain and set aside to cool. Once drained, put in a bowl and coat with 2 tsp oil and 2 tsp sesame oil. Mix well and set aside.
>Heat your wok until it starts smoking. Turn the heat to low and immediately pour in a little oil and fry up your green onion and garlic until they become really fragrant.
Stir in one scrambled egg, then the gai choy, and mushrooms. Turn the heat back on high and continue to stir fry for 1 minute.
Add the noodles. Stir and then pour in the soy sauce mixture. Continue to stir fry for another few minutes or until evenly mixed.
